This Capon is a chicken born in June and caponed in the traditional way (surgical removal of the testicles) at a young age (4 to 6 weeks) by a surgical operation (caponage), then reared in the open air and on cereals. The course is either a meadow or a field of corn which will be eaten by the poultry in the fall during the fattening phase.
Finest festive Poultry from the Gascon terroir, raised outdoor in the Gers, healthily fed and hand plucked.
The festive poultry Xavier Abadie, "Traditions des Côteaux", are raised exclusively for the festive season, in the best conditions of life. Well-nourished (corn, wheat and soybean) on shaded promenades, fattened to southwest maize for the finest flesh, they are optimaly ripened 5 to 7 months allowing them to be well "covered", of the famous good fat, rich in unsaturated fatty acids, close to the olive oil. The traditional hand plucking, as practiced by our grandmothers, preserves their gustative qualities, their beauty, and guarantees their quality and their freshness.
