Artisanal rouille sauce with saffron and lobster verrine 130g SOSU
130122
The authentic flavor of a seafood and saffron-infused recipe to elevate your fish soups.
This premium rouille sauce is a condiment specialty of great finesse, made in France in the Auvergne-Rhône-Alpes region to meet the demands of chefs and caterers. Essential for pairing with classic seafood dishes, it is crafted from a carefully selected blend of ingredients: French rapeseed oil, egg yolks from free-range chickens raised in France (6%), and Dijon mustard made with domestically grown mustard seeds (6%). Its exclusive recipe is enriched with tomato paste, French garlic, fresh lemon juice, and a touch of lobster powder that intensifies its marine notes. The blend is enhanced by an infusion of genuine saffron stigmas (0.02%), giving it its characteristic warm color and subtly spicy aroma.
Professional Uses, Preparation, and Storage:
► Culinary Applications: This traditional rouille is the essential condiment for enhancing rockfish soups or accompanying a premium bouillabaisse in brasseries and seafood restaurants. It is traditionally served spread over garlic-rubbed country bread croutons that have been toasted in the oven, then sprinkled with grated cheese (Gruyère or Emmental) before being dipped into hot broth. In catering or for seafood buffets, it perfectly complements seafood terrines, fish rillettes, or skewers of monkfish and grilled shrimp. Its 130-gram glass jar is ideal for elegant table service, at a buffet, or for upselling in gourmet food shops.
► Preparation: Ready to use, this stable emulsion can be served cold or at room temperature to accompany your dishes during peak service times. Its creamy, coating texture allows for quick portioning into ramekins or neat spreading on croutons, without the risk of separation upon contact with hot broth.
► Storage: Before opening, this product can be easily stored at room temperature in a dry place away from direct sunlight, optimizing space in your dry goods storage. Once the glass jar is opened, the sauce must be refrigerated in a positive-temperature cold room and consumed within 2 months. A signature seafood condiment available in our Grocery section at Le Delas in the Rungis International Market.
