Artisanal red wine and shallot sauce verrine 130g SOSU

The depth of a traditional winemaker's reduction for your hearty meats.
This premium sauce is a culinary specialty of the highest caliber, made in France in the heart of the Auvergne-Rhône-Alpes region to meet the demands of chefs and caterers. Crafted according to the finest culinary traditions, its recipe is based on a concentrated reduction of authentic organic Syrah red wine from the Rhône Valley (67.58%), sourced in Ardèche, blended with generous chunks of French shallots (15%). To achieve a velvety texture and a lovely, lingering finish, the sauce is thickened with unsalted butter from the renowned Étrez dairy, a high-quality vegetable brown stock, and a pinch of Guérande salt. With a powerful aromatic profile featuring warm, caramelized notes, this sauce offers the signature flavor of a homemade dish without the time constraints of reducing it in the kitchen.
Professional Uses, Preparation, and Storage:
► Gastronomic Applications: As a reimagined version of a classic wine-based sauce or Bordelaise sauce, this condiment is an essential ally for showcasing high-quality cuts of meat in brasseries, bistros, and catering services. It pairs perfectly with a beautifully grilled rib of beef, a dry-aged ribeye, skirt steak with shallots, or a roasted duck breast. Its aromatic complexity also works wonders with premium offal such as kidneys or pan-seared veal liver. Its 130-gram glass jar is ideal for elegant presentation on buffets or for refined service directly at guests' tables during prestigious fondue or pierrade dinners.
► Preparation: Ready to use, this sauce can be served cold or—to bring out its full aroma and velvety texture—gently warmed in a saucepan or double boiler before being spooned over your plates just before serving. Its stable consistency ensures it holds up well when served with hot meats.
► Storage: Before opening, this product has a long shelf life and can be easily stored at room temperature in a dry place away from direct sunlight. Once the glass jar is opened, the sauce must be refrigerated and can be safely used for up to 2 months. A regional condiment staple available in our Grocery section at Le Delas in the Rungis International Market.
