Artisanal tartar sauce with free-range eggs and fresh parsley verrine 130g SOSU
130124
The freshness and depth of a traditional recipe for your fish and meat dishes.
This premium tartar sauce is a textured condiment of great finesse, made in France in the Auvergne-Rhône-Alpes region to meet the demands of chefs and caterers. It stands out for its rigorous, 100% local sourcing of its key ingredients: French rapeseed oil, fresh parsley grown in France (7.5%), and a combination of two types of eggs from free-range hens raised in France—chopped hard-boiled eggs (9.88%) and egg yolks (9%). Its authentic and indulgent recipe features Dijon mustard made with French mustard seeds, capers, and crunchy gherkins, all seasoned with Guérande salt, a pinch of pepper, and the zesty combination of Sicilian lemon juice and zest. Its rich texture, dotted with delicate bits, guarantees a unique depth of flavor on the plate.
Professional Uses, Preparation, and Storage:
► Culinary Applications: With its herbaceous freshness and the crunch of its condiments, this cold sauce is an essential accompaniment to seafood dishes and fried foods. It pairs masterfully with contemporary fish and chips, breaded cod fillets, Roman-style calamari, or gray shrimp croquettes. Culinary professionals will also use it to enhance meat dishes, such as a traditional hand-chopped beef tartare, or to accompany warm calf's head. Its 130-gram glass jar is perfectly sized for an elegant presentation on buffets, direct service at the table, or to enhance the displays at specialty food stores.
► Preparation: Ready to use, this stable emulsion is served cold during peak service times. Its firm, rich texture holds its shape well, allowing for neat portioning into ramekins or precise spreading on high-end seafood sandwiches such as “Lobster or Fish Rolls,” without any risk of separation.
► Storage: Before opening, this product can be easily stored at room temperature in a dry place away from direct sunlight, optimizing the management of your dry goods inventory. Once the glass jar is opened, the tartar sauce must be stored in the refrigerator at a positive temperature and consumed within 2 months. An authentic signature condiment available in our Grocery section at Le Delas in the Rungis International Market.
