André Laurent's Lingot Beans are a melt-in-the-mouth, flavourful vegetable speciality. True to its expertise, the manufacturer uses French lingot beans (62%), which are rehydrated by slow soaking for 24 hours before being simmered in a cooked juice. The addition of goose fat (1%), beef stock and aromatic herbs gives this dish a mild flavour and creamy texture, while preserving the texture of the beans. Packaged in buckets, trays or bags, these beans are a high-end side dish solution for demanding professionals. Selected by Le Delas, they guarantee consistent quality without GMOs or ionisation treatment.
Culinary Uses and Professional Advice:
► Accompaniment of choice: They are the natural complement to duck confit, roast pork or Toulouse sausages.
► Cassoulet base: Their excellent cooking properties make them an ideal base for creating a personalised homemade cassoulet.
► Preparation: Already cooked, they only need to be gently reheated in the oven, in a pan or in a bain-marie.

The Laurent family has been producing cabbage since 1906 and founded its first sauerkraut factory in 1945, experiencing good development since then with the success of its Champagne, Label Rouge, Coeur de Chou ranges... Still a producer, this beautiful house now works with partner farmers grouped in a cooperative, and all from the very particular local terroir of Brienne, rich in alluvium and ideal for good cabbage growth. Traceability is therefore exemplary.
