André Laurent's Lentils Cooked in Goose Fat are a high-quality vegetable speciality that combines nutrition and indulgence. Made in Blignicourt, this recipe uses dry lentils sourced in France (34%), carefully simmered in an aromatic juice made from onions, carrots and spices. The addition of goose fat (1%) adds creaminess and an aromatic depth typical of French terroirs. The texture is designed to be melt-in-the-mouth while retaining excellent consistency, preventing the grains from becoming mushy. Selected by Le Delas, these additive-free lentils are rich in vegetable protein and essential minerals, perfectly meeting the requirements of professional catering.
Culinary uses:
► Classic accompaniment: Ideal with salted pork, Morteau or Montbéliard sausages, or a roasted salmon steak.
► Catering preparation: Can be used as a base for a warm or cold lentil salad, dressed with sherry vinegar and chopped shallots.
► Nutrition (GEMRCN): Product recommended for a balanced diet, to be consumed 10 times out of 20 meals.
► Preparation: Gently reheat to preserve the product's organoleptic qualities.

Family sauerkraut and cabbage producer for three generations on the famous land of Brienne, André Laurent has more than 110 years of expertise.
The Laurent family has been producing cabbage since 1906 and founded its first sauerkraut factory in 1945, experiencing good development since then with the success of its Champagne, Label Rouge, Coeur de Chou ranges... Still a producer, this beautiful house now works with partner farmers grouped in a cooperative, and all from the very particular local terroir of Brienne, rich in alluvium and ideal for good cabbage growth. Traceability is therefore exemplary.
