These capons are raised free-range for 170 - 180 days, well above the minimum 150 days required for Label Rouge standard. Their superior-quality meat is tender and flavourful, making these birds suitable for a variety of cooking methods, including roasting, poaching and à l'étouffée. The capons are sorted between 120 and 130 days old, surpassing the minimum requirement in order to guarantee consistent quality of the birds being sold.

La Dombes free-range birds are raised in a unique landscape littered with marshy pools. The “Aviculteurs
de la Dombes” collective was founded here in 1992, built around the common desire to raise free-range, pure-bred birds using slow-growth methods and a 100% natural diet composed of vegetables and minerals, free from GMO and antibiotics. The operational specifications are the same for every producer, and are overseen by the QUALISUD certification body, requiring a diet composed of at least 75% cereal for poultry certified as “Label Rouge”. All the birds are allowed to roam freely, in meadows planted with hedges and trees that provide them with natural shelter. All healthcare treatments are performed using essential plant oils. The birds are slaughtered in a facility located close to the 31 family farms, reducing stress on the birds and ensuring their meat remains as tender as possible. The birds are hand-plucked using a traditional family method.
Chickens, guinea fowl, turkeys and capons are certified “Label Rouge” and sold under “Le Prince” brand. The grey duck (canette grise) is non-certified and is sold under the “Prince de Dombes” brand.
