A fine, generous cut to roast on the bone, ideal for fine dining and carving at the table
Carefully selected by the Le Delas Butcher's Workshop, the saddle of lamb, complete with its two fillets and tenderloins, is one of the most prestigious cuts in the lamb butchery. Presented with its central bone and covered with a thin layer of fat that nourishes the meat during cooking, it offers a particularly tender, juicy and delicately flavoured cut. Its standard weight of approximately 1.6 kg makes it an exceptional cut to roast whole or prepare as a tied roast to showcase the butcher's craftsmanship and create a truly appetising presentation on the plate.
Professional uses, preparation and storage:
► Culinary applications and presentation:
> Roasting whole: Ideal for roasting in the oven with unpeeled garlic, thyme and rosemary, then sliced using a carving trolley or directly in the dining room.
> Serving in portions: Can be boned and prepared as pan-fried lamb medallions, or stuffed with fresh herbs and dried fruit before tying.
> Accompaniments: Pairs perfectly with flageolet beans in their cooking liquid, gratin dauphinois, pan-fried seasonal vegetables or a rich reduction of lamb stock flavoured with savory.
► Cooking and preparation tips:
> Sear then roast: Score the layer of fat and sear over a high heat to brown the meat, then continue cooking in the oven at 180 °C until the centre is pink (approximately 52 °C to 55 °C at the centre).
> Essential resting time: Leave the meat to rest under aluminium foil for at least 10 to 15 minutes before carving to allow the fibres to relax and the juices to distribute evenly.
► Cooking and handling benefits: A whole cut weighing approximately 1.6 kg, offering excellent yield after cooking and serving 4 to 6 guests depending on portion size, selected by Le Delas.
► Format and packaging: Individual vacuum-packed cut weighing approximately 1.6 kg (weight may vary).
► Storage and preservation: Store in a refrigerated environment at between 0 °C and +2 °C. Once the packaging has been opened, keep chilled and consume promptly.
