Diablito hot sauce, selected by Le Delas, is a mystical and indulgent creation. Inspired by a 500-year-old ancestral ritual, this recipe revives the sacred blend that the Incas once crafted using chilli, cocoa and spices. Made in France in a family-run workshop, it is crafted from Jalapeño chillies grown on the volcanic foothills of the Andes in Ecuador, then smoked to become flavourful Chipotle chillies. This chilli develops a gentle heat and a unique smoky aroma, offering a moderate and perfectly balanced intensity. To perfect this surprising balance, the richness of sacred cocoa combines with the creaminess of coconut milk and a bouquet of selected spices. The result is a sauce of great aromatic complexity, ideal for chefs and caterers wishing to add a touch of historic and refined exoticism to their culinary creations.
Professional uses, preparation and storage:
► Roasted and grilled meats: Thanks to its smoky and chocolatey notes, this sauce is the perfect condiment for glazing pork ribs, accompanying roasted meats or brushing over selected cuts of beef from Le Delas before cooking them on the grill or under the grill.
