The Amazônia hot sauce, selected by Le Delas, is a wild, bold and characterful creation. Inspired by an immersion in the heart of the Amazon rainforest amongst the Siekopai people, guardians of ancestral chilli traditions, this sauce pays a vibrant tribute to the culinary richness of the jungle. Crafted with passion in France in a family-run workshop, it is made from Trinidad Scorpion Moruga chillies grown in Ecuador. This legendary chilli, recognisable by its scorpion-stinger-shaped tip, develops a controlled and balanced intensity here. Behind its formidable heat, it reveals a fruity, deep and subtly floral aroma that warms the palate without ever masking the other flavours. Its unique recipe combines the power of the Scorpion chilli with the exotic sweetness of passion fruit, the tangy freshness of lime and a bouquet of spices, offering a complex flavour profile that captures the essence of fruit, peel and root.
