These Aubergines Confites aux épices are a melt-in-the-mouth, spicy delight, spiced up with garlic and coriander. Originally from the Ile-de-France, Sarthe and Rhône regions of France, these aubergines are the perfect accompaniment to pasta dishes or as an aperitif on toast. This vegan recipe contains 96% French ingredients. For a gourmet dish, arrange the spiced aubergines on a plate with a ball of mozzarella, sprinkle with chopped fresh coriander and parsley and drizzle with olive oil. They can also be gently reheated and served with grilled fish, such as sea bass. Finally, the stripes on the penne rigate hold the creamy sauce perfectly, making this a comforting and tasty dish. Add a little grated Parmesan just before serving, piping hot.

Locavore, this only Parisian cannery, Les Sept Collines, is located in the Porte d'Aubervilliers district. Founded in 2021 by two friends, Ketty Six Sebag and Christophe Barut, the company seduced us with its top-of-the-range jars of vegetables and charcuterie in original, tasty recipes, simmered with talent. They work with seasonal fruit and vegetables from local farms and sustainable, or even organic, farming, which is fairly remunerated. The products carry the "Produit en Île-de-France" and "Fabriqué à Paris" labels.
