Carefully crafted in the Piedmont region of Italy, this pasteurised cream is a premium product that showcases two cornerstones of haute cuisine: the porcini mushroom (Boletus edulis) and the truffle. Comprising 60% carefully selected porcini mushrooms, blended with the smoothness of extra virgin olive oil and a touch of cream, it develops a dense, coating texture and a very elegant hazelnut-coloured hue. Its powerful aromatic profile releases intense, characteristic notes of wild mushrooms and truffle, offering chefs a textured, stable base with consistent organoleptic properties to showcase on their menus. Professional uses, preparation and storage: ► Culinary applications: This highly aromatic sauce is a real all-rounder in the kitchen and for catering. Used cold, its spreadable texture is perfect for creating premium canapés, high-end bruschetta or croutons to accompany aperitifs and cocktail receptions. When served hot, thinned with a little milk, cream or chicken stock, it becomes an exceptional condiment for coating fresh pasta (tagliatelle, gnocchi), thickening a risotto at the end of cooking, or accompanying fine white meats, a veal fillet or a free-range chicken breast. ► Use: Ready to use, its concentrated form allows for precise and economical use.
