An exceptional shellfish offering a refined, briny flavour in seafood cuisine. This small, flat-shaped bivalve, selected by Atelier Marée at Le Delas for its impeccable freshness and delicate flesh, is a gem of coastal gastronomy. Prised by chefs for its delicately sweet taste and supple texture, the tellina adds a touch of visual elegance and a distinct Mediterranean or Atlantic identity to your professional culinary creations. Professional uses, preparation and storage: ► Culinary uses: Ideal for a prestigious starter, it works perfectly sautéed ‘à la marinière' with garlic and parsley, or incorporated into a seafood risotto. It also makes a fine garnish for a fillet of white fish or artisanal pasta. ► Preparation: Before cooking, it is advisable to rinse them lightly in sea water or salted water to remove any sand; cooking should be extremely brief, over a high heat and covered, until the shells open completely to preserve the tenderness of the product. ► Storage: A fresh product to be kept in a cold store at between 0°C and +4°C, ideally in its original packaging to preserve the shellfish's moisture.
