Its smooth, shiny ochre shell gives it its name, which means "varnish" in French. It lives in sandy, shallow waters along the Mediterranean and Atlantic coasts. This product is available to order 48 hours in advance, guaranteeing optimal freshness and just-in-time management, typical of seafood products.
