Label Rouge Scottish salmon (Salmo salar) is a fish of exceptional quality, recognised by the world's leading quality label for seafood products. This whole salmon, weighing 5 to 6 kg, is the ideal choice for professionals who want to guarantee excellence on their menu. Its flesh is firm, melt-in-the-mouth and delicately flavoured. Like all the products from our Tide workshop, it is guaranteed to be as fresh as possible: the salmon is prepared on site on the day your delivery is dispatched. This Label Rouge Scottish salmon meets very strict specifications, which include a diet consisting exclusively of marine products, plant-based ingredients, vitamins and minerals, a maximum of 16% fat in the flesh, an identification system guaranteeing total traceability and absolute freshness, farming in accordance with codes of good practice, respecting the welfare of the fish, the environment and sustainability, a maximum density of 1.5% fish to 98.5% water in the sea pens, and guaranteed Scottish origin. Professional culinary uses: This salmon lends itself to a multitude of preparations that highlight its superior quality. It can be roasted, poached, cooked en papillote or à la plancha. Its delicate, melt-in-the-mouth flesh is perfect served with a creamy sauce or seasonal vegetables. It is also an excellent choice for tataki, tartare, sushi or sashimi, provided that the applicable hygiene and storage standards are observed.
