The saumonette, selected by Le Delas' Atelier Marée, is sourced from French fisheries and is graded ‘extra', guaranteeing optimal freshness and firmness of flesh. This fish, which is a prepared small dogfish (skinned and headless), is particularly prized for its pink, firm flesh that is completely boneless, making it a product of choice for catering, delis and brasseries. The "large" size (approximately 1 kg per fish) allows for consistent portioning and excellent presentation on the plate.
Professional uses, preparation and storage:
► Culinary applications: The saumonette is a versatile product that holds up very well to slow cooking. It is traditionally prepared à la grenobloise (brown butter, capers, lemon) or with mustard. As its firm flesh does not fall apart, it is ideal for seafood blanquettes, fish in sauce, or fish curries. For a more modern approach, it can be cut into medallions and roasted, or breaded “fish and chips style” for a premium version.
► Preparation: Ready-to-use product as it is already skinned. Simply remove the central cartilage if you wish to fillet it, or cut it into pieces. Its flesh benefits from being lightly marinated before cooking to bring out its delicate flavour.
► Storage: Fresh seafood that must be kept on ice in a refrigerated environment at a temperature between 0°C and +2°C.
