This fillet is presented skinless and without the belly (the thinner, fattier underside), retaining only the ‘heart' of the flesh to ensure a consistent texture and impeccable presentation. Weighed between 100g and 300g per piece, it offers perfect consistency for controlling portion costs and immediate use. Its flesh, which turns a pearly white after cooking, is prized for its generous thickness and delicately briny flavour.
Professional uses, preparation and storage:
► Gastronomic applications: Thanks to the absence of flank and skin, this fillet is ready for quick and precise cooking. It is ideal for poaching in a flavoured court-bouillon, gentle steaming to preserve its tenderness, or searing on a griddle. Its excellent texture also makes it an excellent choice for premium fish and chips, seafood gratins or fish parmentiers where white, lean flesh is required.
► Preparation: This product saves considerable time in the kitchen as it requires no further trimming. To enhance its flavour, it can be briefly marinated with citrus fruits or fresh herbs before cooking. Its shape ensures even cooking, preventing the thinnest parts from drying out.
► Storage: Fresh seafood that must be kept on ice in a refrigerated environment at between 0°C and +2°C.
