Eggplants cut into slices, grilled and packaged in sunflower oil and ready to eat. Eggplant is bought fresh at the local market “Ortofrutticolo”. The fresh vegetable is stored at a temperature between 0/+6°C. The fresh aubergine is washed under running water, cut at the ends, sliced vertically about ½ cm thick, grilled, acidified in brine, drained and packaged in its marinade based on sunflower oil. The product then undergoes heat treatment, cooled to room temperature and stored at a temperature between 0 and +4°C. Mild flavor with a sweet and sour note.
