Far from industrial pork, the so-called "Capelin" pork is born, raised and slaughtered in the mountains of Cantal in a short supply chain, under conditions favorable to its well-being and development. Given the sometimes harsh climatic conditions, it is raised on straw, with access to the outside, with a low density per m2 leaving it all the space it needs to frolic. He gets a subtle nutty flavor from his diet: 60 to 70% cereals, including 10% chestnuts during his fattening phase, from the nearby chestnut grove of Labesserette. The other secret of the Capelin is due to its genetic heritage of at least 50% of the Large-white charcuterie breed. Retaining only the perfectly conforming animals, its slaughter does not occur before 6 months (compared to 4 to 5 months for the traditional sectors), and more as long as its carcass weight does not reach 85 to 110 kg.
