A traditional speciality from Puglia in southern Italy, this authentic little 100g burrata comes directly from the Puglia region and is also called burratina because of its small size and because, unlike the larger burrata, it does not have a second little ball on top, rather like a nun.
Range of excellence of Mozzarella and Burrata produced in southern Italy from buffalo milk, worked in a very short time and spun by hand.
Arriving on Rungis just after their manufacture, these Italian cheeses are of a remarkable freshness. They are produced using traditional methods, whose spinning is still done by hand. Buffalo milk (raw or pasteurized), selected according to the rules of the AOP is worked in a very short time to preserve its taste (geographical origin Caserta, Salerno, Lazio, Napoli and Foggia). All mozzarellas are DOP certified. According to a purely artisanal know-how, buffalo or cow milk burrata are composed of a fine paste spun by hand to form a kind of pocket, topped with a creamy straciatella (the same frayed paste mixed with cream). The fagots obtained are closed by hand and sealed in boiling water.
