A symbol of the cheese-making heritage of the Ariège Pyrenees, Bethmale (here under the Bamalou brand) is a distinctive, uncooked pressed cheese. This 500g wheel, made from locally sourced cow's milk, is matured for a minimum of eight weeks. Its natural, rustic rind with orange hues conceals a supple, airy and creamy interior, offering a taste typical of the Occitan region.
Gastronomic presentation, serving and storage:
► Sensory profile: This Bethmale is distinguished by its straw-yellow paste dotted with numerous small holes. On the palate, its texture is remarkably supple. It develops a subtle, mild flavour, with notes of hazelnut and undergrowth, without any harshness, making it a universally appealing and much-loved cheese.
► Professional use: Its ±500g size is ideal for resale in delicatessens or butcher's shops. It allows a whole wheel to be offered at an attractive price point (approximately 14 portions of 35g). In the catering sector, it fits perfectly on a platter of Pyrenean cheeses or can be used in cooking to add a binding agent and a creamy flavour to gratins or pies.
► Nutritional quality: Rich in calcium (720 mg/100g), this cheese is highly rated by the GEM-RCN for catering establishments. Its production using thermised milk guarantees optimal food safety whilst preserving a rich flavour.
► Storage: Keep chilled between +2°C and +6°C. To preserve its soft texture after opening, it is advisable to wrap it in cling film or baking paper and consume it quickly.
