This firm tofu, pressed for longer than soft tofu, contains less water and offers an ideal texture for cooking and processing. It's the ideal base for marinating, pan-frying, breading, grilling like chicken, or dicing into salads like mozzarella, in soups and broths... In Japan, it is only eaten fried.

Monsieur SUZU is one of the last remaining artisanal tofu workshops and the only one in France to offer traditional fresh Japanese tofu! The recipe is that of Mr Akira Suzuki, an expatriate in France who started his workshop in order to rediscover the flavours of his homeland, distributing it on a confidential basis to a few Japanese grocery shops in Paris. Its taste and texture are in no way comparable to Chinese or Taiwanese tofu. This authentic Japanese tofu is made 100% hot using the traditional method with organic, non-GMO French soya beans and the natural coagulant NIGARI. The quality of the soya is paramount, very rich in protein and low in fat, to obtain the deep, slightly sweet taste that characterises Japanese tofu. It differs from Chinese tofu in that it has a smoother texture, not at all gummy, and a fine flavour, without the sometimes green soya flavour. High in protein, low in fat and low in sugar, it's ideal for vegan dishes, both savoury and sweet, and can be kept for several weeks. To be convinced, try it!
