This shortcrust pastry is already spread on parchment paper that can be used for cooking. Completely unrolled, it is a strip of dough 1.80m x 38cm x 2.5mm thick. You can cut it into several pieces at your convenience and roll them on themselves with the paper to store them in the freezer. Thaw for about 2 hours in the refrigerator.
This shortcrust pastry can be kept for 25 days in its pocket under a controlled atmosphere or 12 months in the freezer. After opening the bag, you can keep it for 1 week in the cold between 0 and 4°C.

All François pasta is made exclusively from CRC (controlled sustainable cultivation) wheat groat flour grown in Beauce, extra fine butter from the Charentes (extra fine butter means that it was made less than 72 hours after milking), water and salt, without any additives.
Vacuum-packed, or in a controlled atmosphere for the rolls, they can be kept for 30 days in a closed bag between 0 and 4°C, or 18 months in the freezer.
