This brick pastry roll comes in the form of a strip of pastry 3 metres long and 25 cm wide, rolled up on a sheet of wax paper for easy handling. Weighing 180g, it contains the equivalent of 12 traditional square brick pastry sheets. Very thin, flexible and strong, it can be used to make puff pastries, aumônières, corollas and croustillants to wrap a variety of sweet and savoury fillings. Its large format means it can be cut to size, without waste, to suit all shapes and culinary uses, from aperitif snacks to pastry creations. When cooked, it becomes crispy and golden.
