This aromatic herb, made from leaves harvested at the height of the season and air-dried, is characterised by its distinctive flavour profile, combining fresh notes with a delicate hint of aniseed. Selected by Le Delas for its "Sélection des Grands Chefs" range, this tarragon leaf blend has a consistent particle size (5 to 8 mm) and a pale green to grey-green colour, ensuring a slow and steady release of aromas in your professional dishes.
Aromatic enhancement, use and storage:
► Culinary applications: A cornerstone ingredient of classic French cuisine, it is essential for making Béarnaise sauce, Gribiche sauce or for flavouring aged vinegars. It also excels at enhancing delicate fish, poultry in cream sauces or raw vegetable marinades.
► Technical benefits: Air-drying preserves the structure of the leaves, allowing the essential oils to be released as soon as they come into contact with moisture or a fat. Its distinctive flavour allows you to reduce salt intake whilst adding depth to even the simplest dishes.
► Use: For optimal flavour release, it is recommended to add it halfway through cooking to hot sauces or to leave it to infuse for a few hours in cold preparations (oils, vinaigrettes, yoghurt sauces).
