An essential aromatic spice for Nordic and seafood dishes
Dill seeds (Anethum graveolens Linnaeus), selected by Le Delas, are a premium spice derived from the plant's fruits, harvested when ripe and then dried. Sourced from renowned regions (France, Egypt or India), this seed is distinguished by a particle size ranging from 2 to 4 mm and a colour varying from grey-green to grey-brown. Its powerful and characteristic aromatic profile releases fresh, slightly aniseed-like and woody notes. Essential for building flavour profiles in professional kitchens, it offers a more intense and warming alternative to dill leaves, whilst guaranteeing rigorous microbiological purity and being completely free from GMOs or ionisation treatment.
Professional uses, preparation and storage:
► Seafood: It is the essential ingredient for flavouring grilled, poached or smoked fish. It is the key ingredient in ‘Gravlax'-style marinades for the salmon selected by Le Delas.
► Grilled meats and sauces: Add the whole or lightly crushed seeds to your marinades for white meats, your cream- or yoghurt-based sauces, as well as to vinaigrettes for potato or cucumber salads.
► Preserves and baking: Traditionally used to flavour gherkins and “homemade” pickles, they also work well in the making of speciality breads or savoury crackers.
► Preparation: To bring out the essential oils, you can lightly dry-roast the seeds in a frying pan before adding them to your dishes.
► Storage: Store in a cool, dry place, away from light and moisture to preserve its volatile properties. Minimum Shelf Life (MSL) of 24 months.
