Hibiscus dried petals | Bissap bag 250g ZENA
139244
The botanical and tangy signature ingredient for tonic drinks, frozen treats and fine dining
Carefully selected by Zena, these dried hibiscus flowers come exclusively from the botanical species Hibiscus sabdariffa (also known as Guinea sorrel, Bissap or Karkadé). Renowned for their intense purple colour and distinctive flavour profile, the dried calyxes offer a lively initial taste on the palate, with fruity and subtly tangy notes. Their high concentration of natural pigments, organic acids and antioxidants provides exceptional infusion properties, making them ideal for flavouring, colouring and adding a distinctive touch to a wide variety of sweet and savoury dishes.
Professional uses, preparation and storage:
► Culinary applications, beverages and patisserie:
> Refreshing and tonic drinks: Hot infusion or cold extraction to make traditional Bissap (with mint, ginger or lemon), homemade iced teas, kombucha and bases for natural energy drinks (combined with guarana, maté or goji berries).
> Mixology and bar: Creation of signature cocktails, botanical mocktails (hibiscus gin and tonic, reimagined spritzes) and the production of artisanal syrups.
> Ice cream and sorbets: Infusing milk, cream or syrup bases to create full-fruit Bissap sorbets, granitas, artisanal ice creams, soft-serve ice cream, parfaits and frozen vacherins.
> Patisserie and desserts: Poaching syrups for fruit (pears, plums, figs), natural colouring and flavouring of jellies, crèmes, panna cottas, Bavarian creams and mirror glazes.
> Savoury dishes: Tangy reductions and full-bodied juices for flavourful meats (duck, game, pigeon) or oily fish (salmon, tuna), as well as marinades, pickles and fragrant vinaigrettes.
