Carob molasses is a thick, sweet carob syrup extracted from the pulp of the carob tree pod. Because of the dark color of the syrup, the term molasses is more often used. In Lebanon, carob molasses is usually mixed with sesame cream (tahini) to eat with Lebanese bread, especially for breakfast. The mixture can also be used as a condiment in cooked dishes.
