Stripped of their tough skins, they have a uniform diameter of 12 to 20 mm and a beautiful yellow colour. They form the essential base of the famous Moroccan Bissara (a creamy purée or soup traditionally flavoured with cumin and olive oil) or Greek Fava. In traditional and bistronomic restaurants, they are ideal for making comforting winter veloutés, smooth purées to accompany a leg of lamb or roast duck, or contemporary starters such as a reimagined hummus. ► Preparation: The absence of skins on split broad beans saves valuable time during preparation, as it significantly reduces soaking time compared to whole beans and speeds up cooking through to the centre. Their texture mashes easily after cooking to produce smooth, creamy textures.
