This Cape pea, also known as the Lima bean, is a large-sized legume selected by Tersol. Native to Madagascar or Peru, this 100% natural product is distinguished by its melt-in-the-mouth texture and delicate flavour when cooked. Guaranteed GMO-free, non-irradiated and non-frozen, it meets the high quality standards of catering laboratories and professional kitchens. Professional uses, preparation and storage: ► Use in catering kitchens: Its high protein (20.5 g/100 g) and fibre (13.3 g/100 g) content makes it an ingredient of choice for creating nutritious vegetarian dishes or premium legume salads. ► Culinary uses: Ideal for stews, curries (such as the traditional Cape Pea curry) or as an accompaniment to braised meats, it lends a characteristic creaminess to dishes. ► Preparation: Soaking for 12 hours is required beforehand. After rinsing, the product must be placed in cold water, brought to the boil, then cooked for 1 hour to 1 hour 30 minutes before adding salt. ► Allergen management: This product may contain traces of wheat, barley and peanuts due to accidental cross-contamination. ► Preservation and storage: Store in a cool, dry place, away from light.
