Randy is a company based in the Lyon region, made up of specialists in the production of charcuterie and patisserie, and connoisseurs of Lyon products. Randy has its own workshop for making pure butter brioche and puff pastry doughs, made from French flour. Their pure butter brioche dough is kneaded and then left to rest to air and develop. Lyon cooked sausages are made from controlled meats delivered every day. The stuffing is minced in accordance with the charcuterie code of practice. The sausages are stuffed into natural gut casings closed with string, then slowly steamed to colour and reveal all the flavours of the meat. Particular care is taken during this steaming process to develop all the flavours of the cooked sausages. The fillings and toppings for the other recipes are all homemade.
