The turkey breast Rostello, produced by the renowned Fiorucci company, is a cooked cured speciality that brings out the finest qualities of the turkey. Made from whole turkey breast (90%), this product benefits from traditional expertise: the meat is seasoned with a blend of spices and herbs, cured, then cooked in a mould before being browned to achieve its characteristic dark brown crust. This process gives it a tender, non-moist texture, as well as a distinctive flavour profile reminiscent of the finest roast hams, whilst offering the lightness of poultry.
Professional uses, preparation and storage:
► Gastronomic applications: Thanks to its generous size of approx. 5kg and its excellent hold when sliced, Rostello turkey is a valuable asset for caterers and restaurateurs. It is ideal for producing thin slices for light charcuterie platters, cold buffets or premium sandwiches (‘Rostello focaccia'). In hot dishes, it can be served in thick slices lightly seared, or incorporated into gourmet salads where its roasted and spicy flavour will make all the difference.
► Preparation: The product is vacuum-packed to preserve its tenderness. As soon as the bag is opened, it is essential to remove the product from its original packaging. For optimal enjoyment, it is recommended to slice it cold to achieve a clean cut, highlighting the visual contrast between the pink flesh and the brown rind.
► Storage: Must be stored in a refrigerated environment between 0°C and 4°C. This professional-size format allows for efficient stock management in high-volume establishments.
