This ham of exceptional quality, from Label Rouge pigs, is the fruit of jealously protected know-how. Indeed, the Tallec house selects slaughterhouses capable of cutting its hams in a specific way. The salting of each ham is carried out manually with the vein in order to avoid any mechanical salting multi-needles and any mixing in churn. Thus, the ham retains its natural fibrous texture. It is then matured in a dedicated tank, then boned without deformation so that it retains its anatomy and can be cooked with its bone, swaddled in a cloth, in a pot containing a broth of fresh vegetables (carrots and leeks). The recipe for this product has been guaranteed gluten-free by its producer (no cross-contamination not guaranteed).
