French charcuterie tradition at the service of prestigious platters and receptions
This top-quality rosette, selected by Le Delas, is an absolute must-have. Produced in France using 100% French pork (Le Porc Français certification), it strictly adheres to the requirements of the French Code of Practice for Charcuterie and Curing. This dry sausage, originating from Lyon, with its characteristic flavour and authentic appearance, is made from a medium-coarse mince of lean and fatty pork in a carefully measured ratio (140 g of meat used per 100 g of finished product). Stuffed into a natural pork casing, then slowly steamed and dried, this rosette is distinguished by its harmonious pinkish-red cross-section and its clearly defined white fat. Its tender texture offers excellent hold when sliced, as well as a typical, balanced cured flavour, ideal for bringing consistency and sophistication to your menus.
Professional uses, preparation and storage:
► Culinary applications and presentation: Tasty, traditional and good value, this rosette is ideal for making gourmet sandwiches, creating refined cocktail bites or garnishing charcuterie platters. It is also a sure-fire choice to accompany a convivial raclette on the winter menus selected by Le Delas.
► High-volume and retail format: Available as a whole piece of variable weight (approximately 2.6 kg), its regular cylindrical shape (≈ 101 mm in diameter by 500 mm in length) ensures optimal yield and high uniformity when sliced by machine. This format is perfect for sale by weight as well as for high-volume establishments seeking excellent value for money.
► Storage and preservation: Best stored at a constant temperature between 14 °C and 18 °C in a dry place (product prone to drying out). The product has a guaranteed shelf life of 40 days from arrival at the warehouse (60 days in total). Once opened, keep refrigerated and consume within 3 days to preserve all its organoleptic qualities.
