A flagship product of Lyon's charcuterie, crafted with artisanal expertise The Rosette de Thurins, selected by Le Delas, embodies the excellence of the charcuterie tradition of the Monts du Lyonnais. Made from French pork, this speciality undergoes a rigorous production process: pre-mincing, meat maturation, followed by stuffing into natural pork casings, which gives it its characteristic truncated cone shape. With 164g of meat used to produce 100g of finished product, it offers a firm texture and deep, dry-cured flavours. Professional uses, preparation and storage: ► Charcuterie platters: Thinly sliced, it is the essential centrepiece of tasting platters and cocktail receptions, adding an authentic regional touch to your catering selections. ► Restaurant service: Its artisanal presentation and consistent flavour make it ideal for enhancing ‘assiette lyonnaise'-style starters or accompanying high-quality country-style buffets. ► Personalisation: Chefs can serve it with sourdough country bread and a few crunchy gherkins to highlight Le Delas' expertise in sourcing regional charcuterie. ► Preparation: To release the full complexity of its flavours, it is advisable to slice the rosette at the last moment. A thin slice allows you to appreciate the quality of the grain and the melt-in-the-mouth texture of the fat. ► Storage: This cured meat is best stored at a temperature below 18°C in a dry, well-ventilated place. Once opened, cover the slice to prevent it from drying out and to preserve the product's organoleptic qualities.

The Valansot artisanal delicatessen company is located in Thurins, a small village in the franch Massif Central. Having its highest point at an altitude of 791 meters, the climate is favorable to the development of cured meats, favoring a good dryness. This team of experienced charcutiers rigorously selects their meats and does quality work, entirely done by hand, to obtain products with strong and striking natural surface bloom, giving them the perfect taste sought. Their bloomy appearance and their slow drying testify an excellent know-how and a high-quality maturing. A quality recognized by the 2020 Gold medal of the Concours Général Agricole de Paris awarded to the traditional rosette!
