These plain chipolatas are produced by Vallégrain using pigs born, reared and slaughtered in France, rigorously certified to the CC5901 specification. Designed for catering professionals, this recipe features a very high meat content (91%) achieved through high-quality mincing using a 6 mm grid, a butcher's technique that guarantees a pleasant texture on the palate whilst eliminating any chewy bits. Traditionally stuffed into natural sheep casings (23–25 mm in diameter), these chipolatas feature a refined and perfectly balanced seasoning blend of salt, spices, natural flavourings and a touch of brown cane sugar.

► Gastronomic applications: A summer menu staple, these 80g plain chipolatas come in a precise pack of 24 per tray, ideal for controlling portion costs. They are the go-to product for plating up planchas, grills and barbecues in brasseries, bistros and event caterers. Perfect for creating mixed grill platters, buffet options or convivial regional dishes, they are ideally served with homemade chips, sun-ripened vegetables or a summer salad. Their natural casing ensures an excellent crunch when eaten and a neat, butcher's-style presentation.
► Preparation: Ready to cook, this product fits seamlessly into last-minute preparations. To preserve the meat's creaminess and the sausage's juiciness, it is strongly recommended to cook them thoroughly over a medium heat without ever piercing the casing, thus preventing the loss of cooking juices and the meat from drying out.
► Storage: A fresh product that must be stored in a positive cold room at between 0°C and +4°C. Packaged in a protective atmosphere in 2 kg trays to ensure impeccable hygiene and preserve flavour, this assortment has a guaranteed use-by date of 7 days from dispatch.
