Tomme Capra is a soft cheese made from raw goat's milk, with a smooth white natural rind that becomes covered in a beige veil as it matures. Eventually, a thin blue film appears on the rind. This cheese has a distinct goaty smell, a firm texture, a salty flavour and a lingering lactic aroma.
Tomme Capra, a family-run cheese dairy since 1963 in Saint-Bardoux in the Drôme, specialises in the traditional production of raw-milk goat's milk cheeses. They offer a wide range of cheeses, from fresh to mature, including their signature Tomme Capra and their award-winning Picodon PDO. Committed to short distribution channels, this family-run business makes the most of local know-how and resources. Their carefully matured cheeses can be eaten plain or cooked, and go perfectly with a white Crozes-Hermitage.
