This exceptional soft-textured cheese with a bloomy rind stands out for its high cream content, giving it an incomparably smooth texture, often compared to that of foie gras. Selected by Le Delas for its controlled ripening under a cloche and its certified IGP Côte-d'Or origin, it reveals intense milky notes and subtle aromas of cultivated mushrooms, meeting the highest standards of cheese gastronomy.
Culinary uses, preparation and storage:
► Serving on a cheese board: The centrepiece of a cheese board, its presentation under a cloche preserves its pristine appearance and generous shape, ideal for carving at the table or on a catering buffet.
► Food pairings: Its high fat content balances perfectly with the acidity of a Champagne or the liveliness of a dry white Burgundy; it can also be served with fresh fruit such as figs or pears for a contrast in textures.
► Preparation: To fully appreciate its melt-in-the-mouth texture and creamy centre, it is essential to bring it to room temperature at least 30 to 45 minutes before serving. Use a cheese slicer or a knife with a fine blade for a clean cut without crushing the cheese.
► Storage: Must be kept in a refrigerated environment between +2°C and +6°C. Ensure it is stored in its original packaging to protect its bloomy rind and maintain its moisture content until ready to eat.
