Very different from the green camphor cardamom, this black cardamom grows on the paddy highlands of Sapa, in northwestern Vietnam. A true bouquet of ginger, lemongrass and asian flavors on its own, with smoky notes, it is at the base of Vietnamese pho north broth.
Spices and herbs selected in northern Vietnam for their flavor, these products are wild or cultivated in a natural and sustainable way.
Carefully selected by a specialist of spices and aromatics, also a graduate of oenology and born in Vietnam, this range favors the flavors. Each product comes from mountainous regions or highlands of the Upper Tonkin. Local producers are chosen for their know-how and good practices (not intensive nor extensive and without chemical additives). The star anise and clove, for example, are not "exhausted", ie without extraction of their essential oil, guaranteeing intense aromas at tasting. These aromatic herbs and spices are at the origin of the finesse, the perfumes, the lightness of the Vietnamese culinary art. They are perfectly adapted to European gastronomic uses.
