Culinary uses, preparation and storage:
This white fondant is the standard for glazing fine pastries:
► Glazing classics: Perfect for coating éclairs, religieuses, mille-feuilles or choux pastries. It can be coloured with food colourings or flavoured (coffee, chocolate, pistachio) according to your needs.
► Finishing petits fours: Use it to glaze sweet petits fours or mignardises, adding a touch of sweetness and protection against drying out.
► Application: For best results, gently warm the fondant in a bain-marie, microwave or oven until it reaches a temperature of between 30°C and 35°C. Take care not to exceed this temperature to preserve its shine. If necessary, thin it with a very small amount of water or syrup.
