On its exploitation in Essonne, Martial Marchaudon defends a 100% local production. He produces soft wheat, barley, rapeseed and the famous durum wheat which allows the production of the tastiest pasta with an amber color and a characteristic cereal flavor. After a short trip to Seine-et-Marne where it will be ground by one of the last traditional millers in Ile-de-France, the durum wheat flour is processed on the farm. Simply watered down and extruded, it allows the production of pasta that will be dried, spread on clays, at less than 40°C for 14 to 16 hours! This is the secret to their consistency during cooking, nutritional value, natural preservation and exceptional taste qualities.
