From carefully chosen walnuts (AOP Périgord or imported when French walnuts are lacking), the Aiguevive oil mill produces a natural virgin oil without any refining or treatment operation other than a single cold pressing and fine filtration. A process which makes it possible to obtain a very clear oil, with a fresh and pure taste. Perfect for seasonings or to finish a dish, a risotto for example, it also supports gentle cooking.
Equipped with a modern "cold" press, the Huilerie d'Aiguevive, in the Périgord, has enabled the Domaine et Écomusée de Vielcroze to modernize and diversify.
Using rigorously selected nuts, the Aiguevive oil mill is distinguished by the development of oils with a pronounced taste and light color. French hazelnuts or PDO Périgord walnuts; the fruits are processed in the 15th century mill of the Aiguevive oil mill according to an innovative process: they are pressed in a single pressure, cold, before being simply filtered: no refining, no flavoring or coloring. They thus retain their vitamins and essential fatty acids.
The Aiguevive oil mill produces an oil that truly restores the taste of walnuts or fresh hazelnuts. Perfect for seasoning or to finish a dish, these oils also have the particularity of supporting gentle cooking, which allows their use to be varied.
