This jam is made with authentic Mirabelle plums from Lorraine picked when ripe. This fruit is guaranteed by a PGI (Protected Geographical Identification). The word mirabelle plum comes from Latin and means “beautiful to see”. There are two varieties: mirabelle plum from Metz and mirabelle plum from Nancy.

Behind L'Atelier des Saveurs we find Jean-Marie Guilbault, a former chef étoilé, now Maître-Confiturier ("jam-maker master"), then Best Confiturier of France 2011 (Order of Masters Confituriers de France). On the former family farm, La Ferme du Letty, he created with his wife in 2002, as the name suggests, a "Workshop of Flavors". They produce artisanally jams and sweet creams from 100% French fruit (60 to 65% fruit). Their goal: to create jams that really restore the taste of the fruit. For their taste, Chef Guilbault selects the best regional varieties of fruit from small local producers or wholesalers known for some exotic fruits. He then cooks them on a small scale in copper basins with crystallized cane sugar from Guadeloupe, lemon juice and, if necessary, a little apple pectin.
