This honey comes from spring flowers, mostly rapeseed and fruit trees, but also black thorns, hawthorns, dandelions, willows, clovers in varying proportions depending on the batch and the seasons. Its aromatic intensity is sweet with a fine texture. Its flowery taste can present a slight acidity. Light, it is not persistent in the mouth.

With its 500 production hives, the team of the Apiary Billard Farm has not lost its fascination for the bees. After several years of amateur production, they opted for a professional status in 2008 to diversify the four generations small family farm cereal production. The transhumance of the hives allows the production of different honeys. The season begins with the harvest of spring honey. Then comes the acacia honey, the forest honey, the all summer flowers honey, and the sunflower honey. This beekeepers also manages two urban apiaries installed in Chartres, one of which is on the roof of the Mediatheque.
