This honey from the Eure-et-Loir, in the Beauce region, combines chestnut, bramble, clover, lavender and asteracea in varying proportions depending on the season. Its crystallisation ranges from very fine to slightly granular, depending on the batch. Its colour varies from light amber to dark brown. Its flavour is flowery and of medium intensity. It lasts a long time on the palate and can be slightly bitter at the end.

With its 500 production hives, the team of the Apiary Billard Farm has not lost its fascination for the bees. After several years of amateur production, they opted for a professional status in 2008 to diversify the four generations small family farm cereal production. The transhumance of the hives allows the production of different honeys. The season begins with the harvest of spring honey. Then comes the acacia honey, the forest honey, the all summer flowers honey, and the sunflower honey. This beekeepers also manages two urban apiaries installed in Chartres, one of which is on the roof of the Mediatheque. Quality is very important to them in order to offer a palette of tastes closest to nature avoiding false notes of wax or smoke.
