Quinoa is considered a pseudo-grain because it belongs to the Chenopodiaceae family (like spinach and beets), rather than the grass family like wheat or rice.
This exceptional red quinoa is naturally gluten-free, selected for its superior purity (>99.9%) and its uniform 1.5 mm grain size. With its characteristic purple-to-brown hue, it retains its shape perfectly after cooking and has a very crunchy texture, accompanied by a delicate flavor with nutty notes. Rich in plant-based protein (14.1 g per 100 g) and fiber (7 g per 100 g), this dry grain is a valuable ingredient for creating balanced, vegetarian, or vegan dishes that meet the evolving expectations of modern restaurants and caterers.
Professional Uses, Preparation, and Storage:
► Culinary Applications: Its vibrant color and firm texture make it an ideal ingredient for visually enhancing your hot or cold dishes. In cold cuisine, it adds color and crunch to mixed salads, poke bowls, Buddha bowls, modern takes on tabbouleh, and catering verrines. As a hot side dish, it serves as an excellent substitute for rice or bulgur when served with a pan-seared fish fillet, roasted poultry, or a sauté of seasonal vegetables. It also works very well in vegetable patties, delicate stuffings, or mixed with other grains and legumes.
► Preparation: Allow about 80g of dry product per serving. Pour the quinoa into three times its volume of cold salted water, bring to a boil, and simmer over low heat for 10 to 15 minutes. Drain if necessary and fluff with a fork to separate the grains.
