Professional uses, preparation and storage:
► Culinary pairings: This characterful elixir lends itself remarkably well to high-end pairings, brilliantly accompanying fatty fish sashimi, poached premium shellfish or contemporary creations featuring wild mushrooms.
► Enhancing dishes: Once infused, the leaves of this grand cru retain a tender texture and a vegetal sweetness that allow chefs to process them directly through a sieve, for example, finely chopped in a seafood tartare or incorporated into a delicate emulsion.
► Preparation and precise infusion: To extract the quintessence of the aromas and umami without developing tannic bitterness, pour water strictly tempered to around 50°C over a generous quantity of leaves, allow to infuse for 30 seconds, then strain the infusion, taking care to extract every last drop.
► Storage: This delicate, high-quality product requires careful storage away from direct light and heat, keeping the container tightly sealed in a cool area at a constant temperature to preserve its physico-chemical properties and volatile essential oils.
