Special Pizza T00 Wheat Flour, made from 100% rigorously selected French wheat, is a type 00 flour (equivalent to T55) designed to meet the demands of catering professionals. Its fine, powdery texture and pure white colour ensure even hydration and excellent dough stretchability. Delas has chosen this product for its technical consistency, offering a protein content of 11.7g which allows for the development of a strong gluten network, essential for supporting optimal proving times and achieving a light, crispy crust (cornicione) after baking.
