This French wheat flour T80 comes from the old wheat variety "Rouge de Bordeaux". It is a high quality and exceptional flour. This wheat has excellent cooking properties and like most ancient wheats, it comes in a variety of flavors and has a more earthy flavor. This wheat contains more digestible gluten and is rich in beta-carotene. Produced using the traditional millstone process, this flour is gently ground at low pressure, respecting the nutritional properties contained in this ancient variety of wheat.

In 2010, Jean-Christophe Chassaigne left his executive position to become an activist producer for healthy and sustainable food. He starts with a piece of land in Moncrabeau, in the South-West, a tractor, and works without tillage. As a farmer-miller, Alliance Bio is fully committed to its production right through to packaging. From the local soil, the products are worked on its rich soil preserved in a natural way with green manures and an alternation of crops. The flours are produced by crushing with a granite stone grinder. A traditional method for a qualitative and nutritious flour. Gluten is more digestible.
