Panko is a Japanese breadcrumb that is used to make tempura. Composed of wheat flour, starch, skimmed milk powder, egg white, baking powder, lecithin and carotene, it makes it possible to obtain a light, fluid and easily digestible dough. Larger than "classic" breadcrumbs, it can nevertheless be used in the same way, the result obtained is generally more crispy.
